My favorite food categories are ice cream, coffee, cheese, gummy bears, and chocolate. Ice cream contains just about every physics topic that I can think of. Coffee is one of the most innovative areas in the food field over the past few years. Cheese, with its complex interplay of food polymers, is just melting me away. And frankly, I can’t imagine a life without chocolate and gummy bears. Food affects everyone, and helping make the food sector more sustainable and affordable is what drives my passion for the field.
Trained as a physicist with a PhD in statistical mechanics in polymer science, I now have 20 years of experience in food materials science in the food industry. In 2025, I began a second career as a professor in the newly created Food Science & Technology chair at the Adolphe Merkle Institute.
