My favorite food categories are ice cream , coffee, cheese, gummybears and chocolate. Ice cream just contains every physics topicthat I can think of. Coffee is one of the most innovative areas in thefood field over the past years. Cheese with it’s complex interplay offood polymers is just melting me away. And frankly, I can’t imaginea life without chocolate and gummy bears. Food affects everyoneand to help making the food sector more sustainable andaffordable for everyone is what drives my passion for the field.

Trained as a physicist with a PhD in statistical mechanics in the areaof polymer science I now have 20 years of food industry experiencein food material science. In 2025 I started a second career asprofessor of the newly created chair for Food Science & Technologyat the Adolphe Merkle Institute.
